Cimo 10" Professional Oiti Sharpening Steel

Sharpening steel made of SAE 1045 carbon steel with a wooden handle, hardened by inductive heat treatment, 0.5 mm layer, layer hardness above 62HRc. This process ensures a ductile core, making the blade resistant to breakage. Coated with hard chrome by electrodeposition with a fluorine-free Cr-3327 compound, hardness above 1000HV, layer thickness above five microns. Uniform and continuous grooving, free of flaws that could cause defects in the knife edge when sharpened, this control is done by microscope.

Ideal for both professional and domestic use. Durable and of excellent quality. Handle made of varnished hardwood, inserted under pressure onto the pre-machined blades.

At the tip of the sharpening steel there is a convexity, which serves to initiate the sharpening, thus avoiding the "initial impact" of the knife's edge against the tip of the sharpening steel.
