The set includes the 2051/8 C/B knife model, which has a precise cut, incredibly durable sharpness. During its manufacturing process, the blade is tempered at 1000 ºC, and tests that simulate atmospheric effects are carried out, proving the knife's longevity. It features 420 stainless steel, which is characterized by being rust-proof, eliminating the need for extensive blade protection. Regarding cutting quality, it is one of the most appropriate steels for knife construction, as it has good edge retention and is very easy to sharpen.

The set also includes an 8" German steel sharpening steel with a wooden handle, ensuring the edge of your Cimo blades and ideal for both professional and home use. Durable and of excellent quality, made of varnished hardwood, inserted under pressure onto pre-machined blades, they are dishwasher-safe and sterilizable, in addition to their antibacterial protection, which inhibits the growth of bacteria and fungi, ensuring greater hygiene and safety in food preparation. The rod is made of high-quality SAE 1045 stainless steel, SAE 6150 Chrome Vanadium steel, and/or SAE 9254 steel, and coated with hard chrome over its entire surface. This coating aims to protect the entire piece, preventing the sharpening steel from oxidizing/rusting. In addition to high hardness from inductive heat treatment, a 0.5 mm layer, with a layer hardness above 62 HRc. This process ensures a ductile core, making the blade resistant to breakage and grooves, as the grooves are made uniformly and continuously, free from flaws that could cause defects in the knife's edge when being sharpened, a control carried out by microscope.

CIMO Knives are made to last; take good care of them:

  • Always wash after use and dry immediately.
  • Store the knife out of the sheath and only place it inside the sheath when transporting.
  • Use a wooden or synthetic cutting board and store it in a dedicated holder, separate from other cutlery to avoid damaging the edge.
  • Avoid procedures that may damage the edge.
