National 12" steel sharpening steel with plastic handle, ensures the cutting edge of your Cimo product. Ideal for both professional and domestic use. Durable and of excellent quality, made of H503 polypropylene plus dye, with hot air inserted over the blades when injected, they are resistant to washing machines and sterilizable, in addition to their antibacterial protection, which inhibits the growth of bacteria and fungi, ensuring greater hygiene and safety in food preparation.

Shaft made of high-quality SAE 6150 Chrome Vanadium steel and hard chrome-plated over its entire surface. This coating aims to protect the entire piece, preventing the sharpening steel from oxidizing/rusting. In addition to high hardness due to inductive heat treatment, 0.5 mm layer, layer hardness above 62HRc. This process guarantees a ductile core, making the blade resistant to breaks and grooves, as the scratches are made uniformly and continuously, free of flaws that could cause defects in the knives' edge when they are being sharpened, a control carried out by microscope.

Handle with antibacterial protection, which inhibits and reduces the growth of bacteria and fungi. This means a cleaner product for longer, bringing benefits in hygiene and reducing the population of microorganisms that cause contamination. The antibacterial technology used in the handles is incorporated during the product manufacturing process, in the injection of the handles, and lasts for the entire useful life of the products.

The magnetization of the sharpening steel ensures that the knife blade remains attached to the surface of the sharpening steel when corrections are made to the edge, and retains the steel particles that detach from the knife blade during sharpening.
